James Martin served up tasty roast pork with braised red cabbage, mustard sauce and crackling on James Martin’s Saturday Morning.

The ingredients are: 3kg rolled pork loin, scored and 1 tbs sea salt.

For the sauce: 400ml veal jus, 50ml double cream, 25g butter, 1 tbsp grain mustard, 1 tbsp Dijon mustard, Squeeze of lemon, salt and pepper.

For the cabbage: 1 red cabbage, sliced, 3 apples, grated, 100g sultanas, 200ml red wine, 100ml honey, 3 star anise and Sea salt.
