Johnnie Collins served up tasty tomatoes on toast with whipped feta on Sunday Brunch.
The ingredients for the tomatoes: 3 tomatoes, sea salt, black pepper, knob of butter, 1 piece of sourdough and Reserved graceburn oil for frying.
For the quick pickled shallot: 1 banana shallot, ½ a lemon, zest and juice, Dash of Sherry vinegar, Salt and Reserved graceburn oil.
For the garden herbs dressing: selection of herbs and flowers – lovage and nasturtium – but your favourite herbs will do, Salt, ½ a lemon, juice and zest and Reserved graceburn oil.
For the whipped graceburn: 150g graceburn, 1/2 fermented chilli, dash of whole milk, spoon of herb dressing and Reserve one chunk of feta to put in the freezer for garnishing.
