Si and Dave make devilled herrings with green sauce on the Bikers Best of British foods.
The Bikers says: “Use any fresh garden herbs for this vibrant sauce. Less popular herbs such as lovage are also good, but go easy as they can be very strong in flavour.”
For the devilled herrings they used: 600g herring fillets (around 6 small-medium herrings, filleted), 750ml sunflower oil, for deep-fat frying, 6 tbsp plain flour, 3 tbsp semolina, 2 tsp English mustard powder, 1 tsp cayenne pepper, 1 tsp fine sea salt and ½ lemon, cut into wedges for squeezing.
