The Bikers serves up a delicious rhubarb and custard tart with creamy vanilla custard on the return of their Best Of British series 2 cooking program.
The Bikers say: “This is a great make-ahead dessert, this luscious rhubarb tart pairs delicate forced rhubarb with creamy vanilla custard.”
The ingredients for the pastry are: 250g plain flour, plus extra for rolling, 150g cold butter, 1 medium free-range egg, beaten with 1 tbsp cold water.
For the filling: 3 medium free-range eggs, 2 medium free-range egg yolks, 100g caster sugar, 300ml whole milk, 300ml double cream, 1 vanilla pod, split lengthways and seeds scraped out.
For the rhubarb topping: 65g caster sugar and 400-500g rhubarb.
