John Whaite served up a delicious carrot cake loaf on Steph’s Packed Lunch.
The ingredients are: 220g carrot puree, 100g Stork, 275g caster sugar, 3 tsp whisky (or milk), 2 large eggs, 225g plain flour, 1 tsp bicarbonate of soda, ½ tsp fine salt, ½ tsp cinnamon, ½ tsp ground ginger, ½ tsp ground nutmeg and ¼ tsp ground clove.
For the frosting and topping: 60g salted butter, at room temperature , 60g icing sugar, 120g full-fat cream cheese, fridge cold (Philadelphia is best), Ground cinnamon, for dusting and 2 balls stem ginger (from a jar), finely diced.
