John Whaite served up a delicious blueberry and lemon loaf cake on Steph’s Packed Lunch.
The ingredients are: 250g plain flour, 2 tsp baking powder, 1/2 tsp ground nutmeg, 175g caster sugar, 1/2 tsp fine salt, zest of 2 lemons, 2 tbsp lemon curd, 225g buttermilk, 2 large eggs, 125g sunflower oil and 100g frozen blueberries.
For the glaze: 125g icing sugar, 2-3 tbsp lemon juice, lemon zest and 40g fresh blueberries.
