Rachel Khoo chocolate mousse with chickpea water and mint leaves recipe

Rachel Khoo served up delicious chocolate mousse with chickpea water (aquafaba), coconut cream and mint leaves on Rachel Khoo’s Chocolate.

The ingredients are: 200g dark chocolate, finely chopped, 125g aquafaba (chickpea liquid), 100g caster sugar, ½ tsp lemon juice, 1 x 400g tin of coconut milk and A pinch of salt.

For the chocolate dipped mint leaves: 200g 70% dark chocolate, roughly chopped and 20 to 30 mint leaves.
