Mary Berry makes a traditional summer pudding with seasonal fruits and summer fruit smoothie with her grandchildren for a summer lunch on Mary Berry Cooks.
These are desserts it would seem that all the family can lend a hand in preparing on a lovely summers day.
Mary says about her smoothies: “Smoothies are not as sweet as milkshakes and are a little healthier too. If you like yours sweeter, just add more icing sugar.”
The ingredients for the smoothies are: 225g fresh blackberries, 225g fresh raspberries, 225g fresh blueberries, 1 just-ripe medium banana, 150ml natural plain yoghurt, 150ml milk and 1 tbsp icing sugar.
To prepare the smoothies: Measure all the ingredients into a food processor and whiz until smooth.
About her summer pudding, Mary says: “This is an easier to make version of the classic summer pudding that everyone loves so much and is easy to serve being loaf shaped.”
The ingredients for the pudding are: 1kg mixed summer berries – blueberries, raspberries, blackberries, redcurrants, blackcurrants – 250g caster sugar, 1 large unsliced white loaf or thick-sliced white bread (preferably slightly stale).
