Ainsley Harriott served up delicious mango and passion fruit tray bake with lime and passion fruit yoghurt on Ainsley’s Food We Love.
The ingredients are: 200g caster sugar, 225g unsalted butter, softened, plus extra for greasing, 3 large eggs, beaten, 150g self-raising flour, juice and zest of 1 lime, 2 passion fruits, 1 large ripe mango, destoned and diced, 100ml milk and 2 tbsp apricot jam.
For the lime and passion fruit yoghurt: 300g thick Greek yoghurt, 2 tsp runny honey, 1 passion fruit and zest of 1 lime.
