Matt Tebbutt served up oxtail with smoked pancetta, grapes and mace on Saturday kitchen.
The ingredients are: 2 tbsp olive oil, 250g piece pancetta with rind, diced, 2 small brown onions, thinly sliced, 2 sticks celery, roughly chopped, 2 carrots, roughly chopped, 1 bay leaf, 2 sprigs thyme, 4 garlic cloves, roughly chopped, pinch mace, 2kg oxtail, 1kg white seedless grapes, salt and freshly ground black pepper.
