Francesco Mazzei honey and ‘nduja roasted chicken with polenta valsugana and braised cavolo nero recipe on James Martin’s Saturday Morning

Francesco Mazzei served up honey and ‘nduja roasted chicken with polenta valsugana and braised cavolo nero on James Martin’s Saturday Morning.

The ingredients for the chicken are: 1 whole chicken (1,5kg), 140gr ‘nduja, 100gr clear honey, 1 clove of garlic, chopped, 5gr fresh thyme, 5gr fresh marjoram, chopped, 5gr dry oregano, 1/2 bergamot, 2 lemons and 50ml extra virgin olive oil.

For the polenta: 100gr polenta Valsugana flour, 200ml water, 200ml milk, 30gr butter and 80gr Grana Padano cheese.

For the cavolo nero: 500gr cavolo nero, 60gr butter and 50gr shallots.
