James Martin BBQ Scallops with cucumber, apple and strawberry salad recipe on James Martin’s Saturday Morning

James Martin cooked BBQ Scallops with cucumber, apple and strawberry salad, served with a French vinaigrette dressing on James Martin’s Saturday Morning.

The ingredients are: 5 scallops cleaned, roe removed, in their shells, 200g butter, Few sprigs tarragon and 1 lemon zest.

For the salad: ½ fennel sliced, ½ cucumber seeds removed and sliced, 1 apple julienned and 4 large strawberries sliced.

For the dressing: 1 tbs Dijon mustard, 100ml veg oil, 2 tbs white wine vinegar, Splash of water, Salt and pepper.
