Melissa Hemsley served up tasty vegetable fritters with sweet potatoes and a yoghurt and garlic dip on today’s episode of Lorraine.
The ingredients are: Approx. 500g any root vegetables of your choice; carrots, sweet potatoes, butternut squash,parsnip, beetroot etc. 1 tbsp curry powder or your favourite spice mix, 5 tbsp flour or chickpea flour, Sea salt and pepper, 1 egg, beaten and 3 tbsp oil or coconut oil for frying.
For the yoghurt dip: Olive oil, 2 cloves garlic, finely chopped, Herb stems and a few leaves, finely chopped, 200g Greek natural yogurt and Sea salt.
