Lamb Dhansak Indian curry is a favourite weekday dish in Mary Berry’s household and today on Mary Berry Cooks, Mary shares her recipe for this exciting dish.
Mary says: “Dhansak is a popular Indian curry made from meat, lentils and flavoured with spices including cumin and ginger. It’s mild, sweet and rich with just enough heat to satisfy most tastes. Best of all it benefits from being made a day in advance as it tastes even better re-heated the next day.”
For her curry Mary used: 3 tbsp sunflower oil, 1 kg diced lamb shoulder or leg, or a mixture of both, 2 onions, 25g fresh root ginger, 4 garlic cloves, 2 red chillies, seeds removed, 10 green cardamom pods, 1½ tbsp ground cumin, 1½ tbsp ground coriander, ½ tbsp ground turmeric, 1 x 400g can chopped tomatoes, 200ml beef stock, 75g red lentils, 3 tbsp honey, salt and pepper.
