Claire served up Mary Berry’s delicious mango with passion fruit and limoncello pavlova on Mary Berry Saves Christmas.
The ingredients for the pavlova: 6 large free-range egg whites, 350g caster sugar, 1 tsp cornflour and 1 tsp white wine vinegar.
For the filling: 2 ripe mangoes, peeled and halved, stone removed, 5 passion fruit, sliced in half, 300ml double cream, 3 tbsp limoncello liqueur, 25g pistachio nuts, chopped and icing sugar, for dusting (optional).
