James Martin serves up a delicious fillet of plaice dish after flying over the fertile plains of Lincolnshire and the flatlands to explore why it is an area so famed for its world-class pork and how it has the ideal environment for the mass production of perfect peas.
He then makes is dish of plaice with asparagus, crispy bacon and peas three different ways with pea purée on today’s episode of James Martin’s Map of Britain.
