Anita Rani served up a tasty and spicy Indian baingan bharta curry with aubergines, onion salad and a roti on Ainsley’s Food We Love.
the ingredients are: 2 aubergines, 1 medium onion diced, 2 tomatoes chopped, 2 inch piece of ginger finely blended, 2 chilles chopped, bowl of frozen peas, tsp cumin seeds, tsp of salt, tsp turmeric, tsp garam masala and 3 tbsp of oil, rapeseed oil or olive oil, any veg.
