James Martin serves up Spanish style food with his ham croquetas / croquettes with garlic mayonnaise on James Martin Map of Britain.
James says about his dish: “Try serving these crisp ham croquettes as a party snack or as part of a tapas menu.”
For the croquettes recipe James used: 75g butter, 200g plain flour, 500ml milk, salt and freshly ground black pepper, 75g fresh breadcrumbs, 100g ham, 50g serrano ham, chopped, 1 small bunch fresh parsley, 75g plain flour, 2 free-range eggs, 100g panko Japanese breadcrumbs and rapeseed oil, for deep frying.
