Lenny Carr-Roberts served up roasted cauliflower steaks with vegan tarka dahl and sultana puree on James Martin’s Saturday Morning.
The ingredients are: 250g dried Mung Bean Dhal, 250 ml vegetable oil, 500ml vegetable stock, 8 garlic cloves minced, 1 small onion Finley chopped, Thumb piece ginger minced, 1 large red chilli Finley chopped, 1 tsp cumin seeds, 6 cardamom pods split and seeds removed, 2 tsp ground cinnamon, 3 tsp ground Turmeric, 2 tsp ground coriander, 2 tsp ground cumin, 1 tsp ground cayenne, 1 tsp ground paprika, 2 tsp sea salt flakes, 1 tsp cracked black pepper, 2 tsp caster sugar, Zest and juice 1 lemon, 1 tin coconut milk, 1 bunch coriander chopped, 200g baby leaf spinach, 2 cauliflowers cut into steaks and 150g of toasted nuts and or seeds.
