Paul Ainsworth served up tasty A-List fish burgers with buttermilk cod, cornflakes and seaweed tartare sauce on This Morning.
The ingredients are: 1 side of Cornish cod, about 600g, skin taken off and Salt.
For the buttermilk batter mix: 10g garam marsala, 5g smoked paprika, 500g buttermilk and 1 beaten egg.
For the breadcrumb mix: 125g plain flour, 5g onion powder, 5g paprika, 5g garam marsala, 5g garlic powder, 25g cornflakes, lightly crushed, 3 sheets of feuille de brick, cut into dice and Oil, for frying.
For the seasoning: 10g garam masala and 10g salt.
For the seaweed tartare sauce: 2 shallots, finely chopped, 2 gherkins, roughly chopped, 20g capers, 8g rehydrated seaweed, 100g Hellman’s mayonnaise, 25g Frenchie’s mustard, 2.5ml white wine vinegar and Lemon juice, to taste.
To serve: 4 brioche burger buns, 1 baby gem lettuce, 1 beef tomato, Grated parmesan, Lemons and limes, Sea salt and freshly ground black pepper.
