James Martin makes a delicious coffee and cardamom cake on today’s Saturday Kitchen Live for West Life Kian Egan to try a head of his debut solo album release called ‘Home’.
James’s coffee cake is flavoured with aromatic cardamom and served with a delicious pistachio cream and was inspired by Rick Stein’s trip to India.
His ingredients consists of: 200g butter, softened, plus extra for greasing, 200g caster sugar, 4 free-range eggs, 3 tbsp strong coffee, 8 cardamom pods, seeds removed and ground, 250g self-raising flour.
For the filling: 250g double cream, 1 tbsp icing sugar, 5 cardamom pods, seeds removed and ground, 60g pistachios, shells removed, roughly chopped.
For the icing: 110g icing sugar and 1 tbsp warm coffee.
