Lisa Faulkner served up tasty mackerel pate with a cucumber and radish salad on John and Lisa’s Weekend Kitchen.
The ingredients are: 2-3 fillets of smoked mackerel, de-skinned, 2-3 tbsp crème fraiche, 1 tbsp horseradish, Small handful of dill, Juice and zest of half a lemon, Salt and pepper.
For the the pickled radish and cucumber salad: 120ml rice wine vinegar, 2 tbsp caster sugar, Pinch of salt, 1 tsp fennel seeds, 1 cucumber, peeled into ribbons and a handful of radishes, finely sliced.
