Henry Firth and Ian Theasby served up tasty vegan banana French toast with a frozen berry compote on Living On The Veg.
The ingredients are: 1 ripe banana, 250ml unsweetened almond milk, ½ tsp vanilla extract, ¼ tsp ground nutmeg, ½ tsp ground cinnamon, 1½ tbsp plain flour, Pinch sea salt, 1 tsp maple syrup and 4 slices wholewheat bread.
For the berry syrup: 400g mixed frozen berries, 4 tbsp water and 1 tbsp maple syrup.
To Serve: 1 small banana, 4 tbsp plain plant-based yoghurt, 10-12 fresh berries and 1 tbsp coconut flakes.
