Dr Ranj Singh 5 Vegetable Lasagne recipe on Beautiful Baking with Juliet Sear

Dr. Ranj Singh served up a tasty vegetarian Lasagne with 5 Vegetables on Beautiful Baking with Juliet Sear.

The ingredients are: 1 small aubergine, sliced and chopped, 300g mushrooms, roughly chopped, 3 tbsp vegetable oil, 1 onion, finely chopped, 3 cloves garlic, finely chopped, 1 x 400g tin tomatoes, 200g roasted peppers from a jar, drained and sliced, 35g unsalted butter, 40g plain flour, 300ml semi-skimmed milk, 150g spinach, fresh or frozen, 20g Cheddar cheese, grated, 85g lasagne sheets (or enough for 2 layers) and freshly ground black pepper.
