Nadia Sawalha served up a tasty turkey with crispy roast potatoes and brandy braised celery for the festive season using her mum’s recipe on Nadia’s Family Feasts.
Ingredients: 12 potatoes, peeled and quartered (floury potatoes are best – Maris Piper, Désirée, King Edward), Flaky salt and Sunflower oil or duck fat (I know it’s very fashionably to use goose fat but I’m not a fan).
For the braised celery: 1 large or 2 small heads of celery, 330ml (½ pint) vegetable stock, 55g (2ozs) butter, 1 tbsp plain flour, ½ – 1 tsp beef extract (yes, that’s Bovril or veggies can use Marmite), A good slosh of brandy or whisky (I usually pour it into a wooden spoon and let it splosh over the sides), Salt and plenty of black pepper.
