Catherine Tyldesley served up tasty Spanish meatballs on John and Lisa’s Weekend Kitchen.
The ingredients are: 2-4tbsp drained oil from the jarred peppers, 1 onion, peeled and chopped, 2 cloves garlic, peeled and chopped, 2tsp ground cumin, 2 sprigs fresh thyme, leaves removed, 1tbsp sweet smoked paprika, 150g Jarred red peppers or 1 fresh red pepper, de-seeded and sliced, 1 tin butter beans, drained, 1 tin chopped tomatoes, 400ml chicken stock, 1tbsp red wine vinegar, 500g turkey mince, Salt and pepper.
To serve: 2tbsp fresh parsley, chopped.
