Delicious meals in a hurry is pretty much the theme on James Martin: Home Comforts today and James has come up with a wonderful Hazelnut and parmesan-crusted chicken dish to fit his the theme perfectly.
To make his dish James adds chopped hazelnuts, parmesan, thyme and lemon zest to breadcrumbs.
James says: “The joy of cooking this dish at home is that you can use whatever is left over in your cupboards. You might have almonds to hand rather than hazelnuts, or a chunk of cheddar rather than parmesan, it really is up to you.”
The ingredients for the master chef’s dish are: 4 × 200g / 7oz chicken breast, 100g dried white breadcrumbs, 4 Lemons zested, 100g peeled hazelnuts, 75g finely grated fresh Parmesan, 10 sprigs of fresh thyme leaves only, 100g butter, 100g plain flour, 2 medium eggs, Salt and black pepper.
