Chicken fricassée is on the menu in today’s episode of James Martin: Comforts.
James says about his chicken fricassee: “A dish of chicken cooked in stock and wine with double cream stirred through at the end for a rich taste.”
To start is chicken fricassée / chicken in a creamy rich sauce dish; James cuts his whole chicken into portions and cooks it in a white stew consisting of chicken stock, mushrooms, white wine, onions and fresh thyme.
