Gino served up tasty (Italian fish estrada) swordfish with Italian sauteed potatoes and a tangy gremolata sauce on Gino’s Italian Coastal Escape.
The ingredients are: 1 large bunch of parsley, leaves only finely chopped, 3 fat cloves of garlic, peeled, 1 lemon, zest and juice, 1 ½ tbsp capers, rinsed and roughly chopped, About 300ml olive oil, 1 large bunch of rosemary, 500g new potatoes, par boiled until al dente, whole and 2 x 175g swordfish steaks.
