Paul Ainsworth served up a delicious upside-down apple pie with homemade butterscotch sauce and vanilla ice cream on The Best Christmas Food Ever.
The ingredients are: 50g cold unsalted butter, cut into small pieces, 50g sugar, 5 Braeburn apples, peeled, cored and cut into quarters and 100g good quality all-butter puff pastry.
For the butterscotch sauce: 170g muscovado sugar, 2 tsp Cabernet Sauvignon vinegar, 170ml double cream, large pinch sea salt and 20g cold butter, cubed.
To serve: good-quality vanilla ice cream.
