Catherine Fulvio served up tasty all-in-one stuffed turkey breast with spinach and a apricot and mushroom stuffing on The Best Christmas Food Ever.
The ingredients for the apricot and mushroom stuffing are: 2 tbsp olive oil, 3 large shallots, finely chopped, 100g chestnut mushrooms, chopped, 2 tsp chopped sage, 4 tsp chopped parsley, 1 garlic clove, finely chopped, 2 tbsp white wine, 5 dried apricots, chopped, 120g fresh breadcrumbs and 3–4 tbsp chicken stock, to bind.
