Liam Charles served up a delicious plantain tarte tatin with rum and raisin cream on Liam Bakes.
Thje ingredients are: 100g golden caster sugar, 85g unsalted butter, 5 firm plantains, sliced into 2cm-thick circles, 1 generous pinch fine salt, Zest of 1 orange and 500g pack ready-rolled puff pastry.
For the spiced cream: 300ml double cream, 3 tbsp icing sugar, 4 tbsp dark rum, ½ tsp ground ginger, Zest of 1 orange, ¼ tsp cayenne pepper, 1½ tsp ground cinnamon, 1 tsp ground cloves and 100g raisins.
