James Martin makes a dripping cake for actress Rashida Jones on today’s Saturday Kitchen Live.
James says “Dripping cake is rich, sweet and laced with dried fruit – very similar to lardy cakes.”
For the dripping cake ingredients, James used: 140g soft brown sugar, 85g clarified beef dripping, 225g mixed dried fruit and candied peel, 225g wholemeal flour, 1 tsp baking powder, 1 pinch ground cinnamon, 1 pinch freshly grated nutmeg, 1 pinch ground allspice and ½ tsp bicarbonate of soda.
James serves his dessert with a light panna cotta and roasted rhubarb.
