Jose Pizarro served up a tasty Spanish beef stew (Fricando of Beef) with mushrooms and olive oil mashed potatoes on James Martin’s Saturday Morning.
The ingredients are: 60ml olive oil, 1.2kg beef shin in large pieces, Sea salt and freshly ground black pepper, 1 large onion, finely chopped, 1 carrot, finely chopped, 1 celery stalk, finely chopped, 500g fresh tomatoes, chopped, 100ml brandy, 200g wild mushrooms and 150g black olives, pitted.
For the picada: Olive oil for frying, 1 slice bread, 25g hazelnuts, 25g almonds and Garlic clove.
For the mashed potatoes: 4 Large red onions, 4 garlic cloves, peeled, 1 bay leaf and 6 tablespoons extra virgin olive oil.
