Jean Christophe Novelli served up a tasty fillets of fish with ratatouille for the summer on This Morning.
The ingredients are: 1 aubergine, roughly chopped, 2 courgettes, roughly chopped, 3 heads baby fennel, roughly chopped, 3 baby leeks, roughly chopped, 1 red, yellow and green pepper, 1 bunch asparagus, roughly chopped, 1 stem cherry tomatoes, 2 pinches cumin, 2 pinches coriander, 2 pinches fennel seeds, 1 pinch smoked paprika, 1 star anise, Sprig fresh thyme, 1 x vanilla pod, split, 1 small soup spoon tomato puree (optional), Squeeze of honey or maple syrup, 1 x tin of chopped tomatoes or 400g fresh tomatoes, 1 or 2 cloves chopped garlic, 10 mixed green and black olives, halved, 1 bunch fresh basil, torn, 1 soup spoon olive or rapeseed oil and Mixture of fish – 150g of each cod, salmon, scallop, prawns and monkfish (all with skin on).
To serve: drizzle of balsamic or sherry vinegar, 80g Parmesan cheese, Cress or rocket and Cracked black pepp.
