Phil Vickery showcased his melt-in-the-middle turkey burgers stuffed with melting gruyere cheese and served with a coconut rice salad on This Morning.
The ingredients: 500g minced turkey (leg if possible), 2 tbsp shop bought mayonnaise, 3 tbsp chopped fresh basil, 2 tbsp Worcester sauce, ½ medium egg white, lightly beaten, Salt and ground white pepper, 1 tbsp breadcrumbs, 150g Gruyere cheese cut into small slices and 4 tbsp oil.
For the relish: 5 ripe plum tomatoes, chopped into small pieces, ½ small red onion, very finely chopped, ½ tsp small red chilli, very finely chopped, 3 tbsp chopped coriander, Juice 2 large limes, 2-3 tbsp extra virgin olive oil, Salt and pepper, Pinch sugar.
For the coconut rice salad: 2 packets microwave coconut rice, heated according to packet instructions, 8 plump radishes, very finely chopped, 1 small head chicory, finely chopped, 2 tbsp extra virgin olive oil, 2 tbsp mirin, 4 tbsp rice wine vinegar, 1 tbsp soy sauce, Salt and ground pepper.
