Luke Mathews served up John Dory with squid, brown shrimps, preserved lemons, octopus, chorizo and anchovies on James Martin’s Saturday Morning.
The ingredients are: 4 x120g John Dory fillets, 100ml rapeseed oil, Salt and pepper, Pinch of smoked paprika, 100gm diced chorizo, 2 x squid tubes, cleaned, 80gm brown shrimps, 100g cooked octopus tentacle, 100g butter, 1 lemon, juiced, Bronze leaf fennel or fennel weed and 10g sliced preserved lemon.
