John Whaite from The Great British Bake Off makes a warming and seasonal carrot and ginger pudding, served with cardamom custard on This morning.
To make John’s delicious treat, beat 170g of unsalted butter, 80g dark muscovado sugar, 90g golden caster sugar with the zests of a lemon and an orange until pale and fluffy, and the sugar is well dissolved.
Add three eggs and beat in, then stir in 150g of carrot and 100g of raisins, before sifting over the 170g of flour, 2tsp ginger and 1tsp bicarb.
Fold in to a smooth batter then divide between well-greased pudding moulds. Place onto a baking tray and bake in the preheated oven at 180C for 20-25 or until a skewer inserted into the centre comes out clean.
