Nigel Barden serves up delicious Portuguese rice pudding (arroz doce) for Foodie Thursday on Radio 2 Drivetime with Simon Mayo.
The dessert is traditionally made from short-grain rice (such as arborio rice), egg yolks and flavored with lemon peel.
The ingredients are: 150g short-grain white rice, preferably Portuguese carolino, Japanese sushi or Spanish bomba rice, 800ml whole milk, 80g caster sugar, A couple of strips each of lemon and orange zest plus grated zest to taste (optional), 1 cinnamon stick, broken in half, 3 egg yolks, 50ml single cream (optional), 40g pistachios, shelled, toasted and roughly chopped, Ground cinnamon, to taste and sea salt flakes.
