Nigel Slater served up a tasty pide (homemade Turkish bread with a spicy Turkish sausage (sucuk), tomatoes and cheese filling) on Nigel Slater’s Middle East.
The ingredients for the dough: 450g bread flour, plus extra for kneading, pinch salt, 7g sachet instant yeast and 350ml tepid water.
For the filling per pide: 100g Kashkaval cheese, grated, 2 tbsp dried red chilli flakes, 1 x 80g raw sucuk (or sujuk) sausage (spicy Turkish sausage), thinly sliced, 3 tomatoes, thinly sliced and 2 tbsp olive oil.
