Lisa Allen served up a melting Christmas pudding with brandy cream dessert for the festive season on Saturday Mornings with James Martin.
The ingredients are: 160g dark chocolate, 75g soft butter, 60g rice flour, 60g mulled wine syrup (1 bottle shop-bought mulled wine, reduced to a syrup), 30g flour, 6g ground almonds, 1 ½ tsp ginger powder, 1 ½ tsp ground nutmeg, 1 ½ tsp ground cinnamon, 1 ½ tsp mixed spice, 10g mixed peel, 3 yolks, 3 egg white, 130g sugar and 125g Christmas pudding.
For the brandy and mascarpone cream: 150g mascarpone, 20g icing sugar, 130g whipping cream and 40g brandy.
