Russell Grant joined Si and Dave at home for Christmas where they served up a luxury lobster mac ‘n’ cheese dish.
The ingredients are: 300g macaroni, salt, to taste, 4 cooked lobster tails, shell on, 100ml white wine, 750ml milk, 1 bay leaf, slice onion, 1 tbsp vegetable oil, 50g butter, 1 onion, finely diced, 50g bacon lardons, 2 garlic cloves, sliced, 1 sprig thyme, leaves only, 60g plain flour, 1 tsp mustard powder, ¼ tsp cayenne pepper, 75g cheddar, grated, 75g gruyère, grated and 50g fresh breadcrumbs.
To garnish: 2 cooked lobster tails, knob of butter and 2 tbsp brandy.
