The hairy bikers lamb shank tagine with figs recipe

Sim and David served up a tasty lamb shank tagine with figs for the festive season on today’s episode of The Hairy Bikers Home for Christmas.

The ingredients are: 2 tbsp olive oil, 4 lamb shanks, 2 onions, thickly sliced, 4 garlic cloves, finely chopped, 1 tsp ground coriander, 1 tsp ground cumin, ½ tsp cayenne pepper, ½ tsp ground cinnamon, ½ tsp ground cardamom, ½ tsp ground ginger, 600ml chicken stock, large pinch saffron, soaked in warm water, salt and freshly ground black pepper, 1 tbsp honey, 12 dried figs, 1 tbsp preserved lemon, finely chopped and 1 tbsp lemon juice.

To serve: few parsley leaves and few mint leaves.
