James Martin served up a roasted vegetable tart with pesto on Saturday Morning with James Martin.
The ingredients for the pastry are: 250g plain flour, 150g butter, cold diced, 1 tsp fine salt and 1 egg.
For the filling: 1 large bunch basil, 100g pine nuts, toasted, 100g parmesan grated, 100ml olive oil and 2 eggs.
For the topping: 1 aubergines, thinly sliced, 1 large yellow courgette, thinly sliced, 1 large green courgette, thinly sliced, 2 large carrots, thinly sliced, 2 tomatoes, sliced, Oregano sprigs, Olive oil and Salt and pepper.
