Nigel Barden served up the perfect American style chilli con carne on Radio 2 Drivetime with Simon Mayo.
The ingredients are: Beef dripping or vegetable oil, to fry, 1kg minced meat, 2 onions, thinly sliced, 5 cloves garlic, minced, 350ml freshly brewed coffee, 2 chipotle chillies, 2 ancho chillies, 1 tsp cumin seeds, toasted, 1 tbsp Mexican oregano (Nigel used Sicilian. So don’t worry where it’s from!), 2 tsp chilli powder, or to taste, 2 tbsp dark muscovado sugar, 2 fresh long green chillies and 2 400g tins kidney beans, drained and rinsed.
