Brian Turner served up partridge with Indian spices on Saturday Morning with James Martin.
The ingredients are: 4 crowns of partridge, 1tbsp curry powder, 1tbsp ground nut oil, 2oz butter, ½ apple in small dice, 6oz mirepoix (onions, celery, carrots), small dice, 1tbsp curry powder, ½ pt chicken stock, 1tbsp chopped parsley, ¼ pt double cream, Juice of 1 lemon, 6 tomatoes, deseeded, ½ red pepper, ½ yellow pepper, 1 courgette, Salt and pepper, 2oz butter, ½ lemon and 1tbsp chopped parsley.
