Phil Vickery served up salmon frittata with mackerel and a simple tomato salsa to eat yourself clever on This Morning.
Ingredients are: 4 tbsp olive oil, 2 red onions, peeled and finely chopped, 1 tbsp fresh sage chopped finely, 1 red pepper, de seeded and cut into 2cm pieces, 75g baby spinach leaves, 250g cooked Jersey Royal potatoes, cut into 2cm cubes, skin on, 6 medium eggs, salt, pepper and 225g fresh salmon fillet or mackerel fillet free of skin, cut into 3cm pieces.
For the tomato salsa: 6 ripe, tasty tomatoes, at room temperature (if you can leave them in your fruit bowl for 2-3 days even better), ½ small red onion, very finely chopped, 2 tbsp chopped chives, 3 tbsp extra virgin olive oil, 2 tbsp sherry vinegar, salt, pepper and sugar.
