James Tanner served up a classic fish finger sandwich with tartare sauce on today’s episode of Lorraine.
The ingredients tartare sauce: 5 tbsp mayonnaise or substitute creme fraiche/yoghurt for a lower fat version, 1 pickled gherkin, diced, 1 tbsp capers, roughly chopped, 1 banana shallot, diced and 1 tbsp chopped parsley.
For the fish finger: 200g skinless sustainable cod fillet, 4 tbsp plain flour, 1 egg, 6 tbsp panko breadcrumbs, ½ tsp smoked paprika and Oil for frying.
For the sandwich: ¼ iceberg lettuce, 4 slices of bloomer bread, or bread of your choice, 6 thin slices of cucumber and 1 plum tomato, sliced.
