Nigel Barden served up beef mini roast with carrot and cardamon chutney, and coriander glaze on Radio 2 Drivetime with Simon Mayo.
The ingredients are: 1 x 350-400g beef mini roast (Nigel used beef topside), Salt and freshly milled black pepper, 1tsp coriander seeds, crushed, 1 whole garlic bulb, unpeeled and broken into cloves, 2 red onions, peeled and cut into quarters, 1tbsp rapeseed oil, 2tbsp fruit chutney, 2tbsp freshly chopped coriander leaves.
