Jane Beedle served up a salmon and pesto puff for a mid week supper on today’s episode of Lorraine.
The ingredients: 500g salmon fillets, skinned and cut into large chunks, Juice of 1 lemon, 375g pack ready rolled puff pastry, or homemade if you prefer, 150g pack of green pesto from the chiller cabinet, or jar/homemade, 125g mascarpone cheese, 1 Small red onion, grated, Vegetable cube crumbled, or 1 tsp vegetable stock powder, Black pepper, Approximately 5 tbsp tomato ketchup, 1 medium egg, beaten for brushing and Little milk for mixing.
